The cap is punched down and the juice pumped over in order to gently extract the finest tanins offered by the perfect rippeness of our best block. Blending after malolactic fermentation and ageing in oak cask (foudre) for 18months.
Cuvée Cardinalice is made from a selection of our oldest Grenache and Mouvedre vines on a magnificient terroir of rolled pebbles. This 18 months ageing offers the delicacy and the elegance of a great wine .You will find some beautiful aromas of red and black berries melted with spicy notes moving onto a silky and intense finish. Pairing suggestion : game or braised meat. We suggest decanting before serving at around 18°C.
