VINEYARD : WHITE GRENACHE 60% CLAIRETTE 20% ROUSANNE 10 %, BOURBOULENC 10%
The vineyard is located in the north of the area Chateauneuf du Pape. There is 1 hectare with vines aged 30 to 80 years. Soils : sandy, clayey, slimy. Traditional and biodynamic farming: ploughing and natural grass cover crop. Only very low dosage of copper and sulphur are used for the protection of the vineyard.

WINEMAKING METHOD :
Grenache and harvested on September 4th, Bourboulenc and Clairette on September 29th and 23th.
Hand picking and manual sorting. Grapes arrive to the winery in small boxes (600 liters). De-stalking and crushing, smooth pneumatic pressing, settling, fermentation to 18/20°C during 10 to 12 days in vat for 80% of the blend and in one year old barrels for clairette (20%). Racking, filtering and bottling in February 2015.
Elegant and pale straw yellow colour. Nose : white currant, melliferous white flowers, white fruits, almond, chamomile, linden, marzipan, highlighted by a subtle minerality and white pepper. The palate is round, fleshy, generous followed by a surprising freshness for an ample final mixing licorice and blond tobacco, lush, with light wood.
To drink with aperitif, and "Noix de St Jacques" with saffron, Bresse chicken with morels, cheese like creamy or dry Pélardon. Serve at 12/14°C, it will drunk between 2015 and 2022.
