VINEYARD : ROUSANNE 50 %, CLAIRETTE 35 % WHITE GRENACHE 15 %
1 hectare of vines aged 41 years and 0.3ha Clairette aged 85 years. Soils : sandy, clayey, slimy. Traditional and biodynamic farming : ploughing and natural grass cover crop. Only very low dosage of copper, sulphur and herbal tisanes are used for the protection of the vineyard.

WINEMAKING METHOD :
Harvest white Grenache and Roussanne on September 16 and Clairette on October 4. Hand picking, hand sorting only grapes with full ripeness.
Destemming, smooth pneumatic pressing, settling, 1 and 2 years old barrels (225L and 645L) fermenting and aging. Fermentation to 17/19°C, agitation of the lees (batonnage) during all the vinification and maturing.
MATURING : Barrel aging on lees until the bottling in July 2014 (9 months) in a mix of 1 and 2 years old noble French oak barrels.
Sustained Straw yellow colour with green tints. Very expressive, rich, mineral and complex nose, with notes of exoticand white fruits, quinces, melon, almond paste, saffron, cinnamon and honey, with a slight smoky roasted and a resin-coated tip, Virginia tobacco. The mouth is deep, very homogeneous, with elegant relief, subtly buttery to light tobacco aromas. Evolution is generous, elegant, fresh, fleshy and long.
This wine will go with "Noix de St Jacques", lobsters, fish like red mullet, white meat with sauce and wild fungus, cheese like St Nectaire. Serve at 12/14°C and it will keep between 2015 and 2024
