VINEYARD : PURE GRENACHE NOIR
A selection of very old vinestock of Grenache planted by Hippolyte SERGUIER between 1880 and 1948 ploughed and grassed naturaly according to biodynamic culture principles (3rd year of conversion).
YIELDS : 15 hl / ha PRODUCTION : 5 000 bouteilles.
TRADITIONNAL VINIFICATION :
On October 8th manual picking and sorting of the grapes that are transported from the vine to the winery in small boxes of 600 liters. Desteming, crushing, and then put in cement vats maintained from 25 to 32°C, 25 days total maceration, punching the cap daily. Racking, pneumatic wine press - separation of press juice - racking, malolactic fermentation, racking. Yeasts consumed quitly all the sugar in beginning of November for an alcohol content of 15°5.
Ageing: Only 11 months in cement vat to preserve fresh typical cherry and licorice aromas of old Grenache.
Sustained purple colour. Very deep and complex nose of wild prune, blackberry jam, cherry, mixed with sweet pepper, curry and saffron. Palate with ripe cherry and a hint of cherry stone and licorice.
Sumptuous attack with velvety roundness and fleshy, silky tannins. A remarkable intensity in a very nice balance that is lost between ampleness, length and freshness.
