Manual and very careful. The Harvest started on the 4th of September. The very good weither conditions of the year allowed us to harvest beautiful grapes, with excellent maturities.
Light press and fermentation, with controled temperatures at 18°C thanks to the thermoregulation, for the wine to keep and to express all its fragrancies and its crystal-clear color.
On fine lees, before the bottling to the Domaine at Spring !
