Les Quartz is a parcel-based cuvée made from old vines located in the "Les Cassanets" terroir, a sandy soil covered with rolled pebbles.
Produced using organic and biodynamic methods, the grapes are selected by massal selection. Vinified in truncated wooden vats, aged in amphorae.
VINIFICATION :
Hand-picked, sorted in the vineyard and then in the cellar.
100% de-stemming, followed by natural fermentation in wooden truncated-cone tanks. Manual punching of the cap and delestage are carried out throughout the 34-day maceration.
AGEING: 80% in demi-muids (600L) aged from 2 to 9 wines and 20% in barrels for 14 months.
