Only carefully sorted and selected grapes are vinified in Chateauneuf-du-Pape. Separated or whole cluster, they ferment in stainless steel tanks, concrete or oak casks before becoming the « precious nectar ».
During the harvest, the grapes are sorted by hand. The pickers discard damaged, badly stained or dried grapes. In Châteauneuf-du-Pape, sorting is a requirement and obliged according to the rules of the appellation. More and more winemakers even realize a "double sorting", first in the vineyard followed by a second sorting on a sorting table in the cellar; completely eliminating unwanted grapes.
